Healthy Desserts from Bertolli Extra Light Tasting Olive Oil and Giveaway

I know you're looking at this post title and thinking - desserts by Bertolli Extra Light Olive Oil? Yes my dears, you can make your desserts....healthier desserts with Bertolli Extra Light Tasting Olive Oil. And one of you will get that chance when one lucky winner will win Two (2) bottles of 17 oz. Bertolli Extra Light Tasting Olive Oil (more details below)


but first, more about the wonderful desserts you can make with Bertolli. By substituting Bertolli for butter, margarine or shortening in your dessert recipes, the saturated fat intake in cut by 25%. "According to the Food and Drug Administration, consuming about two tablespoons (23 grams) of olive oil a day may reduce your risk of heart disease. The greatest benefit comes by substituting olive oil for saturated fats rather than just adding more olive oil to a diet." The vitamin E in Bertolli Olive Oil makes cakes, brownies, breads and muffins turn out evenly textured and moist and because it is a healthy, cholesterol-free substitute for butter or vegetable oil. Here are two examples of some very tasty (and believe me, they taste amazing) and healthier desserts made with Bertolli Extra Light tasting Olive Oil (my favorite were the brownies - mainly because I love all things chocolate):

CHOCOLATE GLAZED BROWNIES
Ingredients:
2/3 cup Bertolli® Extra Light™ Tasting Olive Oil
1 cup sugar
1/4 cup water
4 cups semi-sweet chocolate chips, divided
1 tsp. vanilla extract
1-1/2 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
4 large eggs, lightly beaten
1 cup finely chopped pecans, toasted (optional)

Directions:
* Preheat oven to 350°. Spray 13 x 9-inch baking pan with nonstick cooking spray; set aside.
* Cook Bertolli® Extra Light™ Tasting Olive Oil, sugar and water in 4-quart saucepan over medium-high heat until sugar dissolves. Stir in 2 cups chips and vanilla until smooth with wire whisk. (Batter will be gritty). Let cool 15 minutes. Stir in flour, baking soda and salt with wire whisk. Stir in eggs and pecans. Spread batter into prepared pan.
* Bake 35 minutes or until toothpick inserted in center comes out clean. Evenly sprinkle warm brownies with remaining 2 cups chips in single layer. Let stand 5 minutes to soften, then spread over brownies. Cool brownies completely on wire rack.

CLASSIC OLIVE OIL CAKE WITH BLUEBERRY
Chef Fabio Viviani Recipe
Ingredients:
4 eggs
1-3/4 cups sugar, divided
1/4 cup milk
2 cups all-purpose flour
2 tsp. baking powder
1-1/4 cups Bertolli® Extra Light™ Tasting Olive Oil, divided
2 containers (6 oz. ea.) fresh blueberries
Juice of 1 lemon (about 3 Tbsp.)
1 tsp. grated lemon peel

Directions:
*Preheat oven to 350°. Spray 13- x 9-inch baking pan with nonstick cooking spray; set aside.
*Beat eggs with 1-1/4 cups sugar in medium bowl with electric mixer on medium-high speed until eggs are pale and thick, about 5 minutes. Slowly beat in milk. Slowly add flour blended with baking powder and mix just until blended. Add 1 cup Bertolli® Extra Light™ Tasting Olive Oil and beat just until blended. Turn into prepared pan.
*Bake in center of oven 30 minutes or until toothpick inserted in center comes out clean. Cool on wire rack 10 minutes; remove from pan and cool completely.
*Meanwhile, for blueberry sauce, combine blueberries, remaining 1/2 cup sugar, remaining 1/4 cup Bertolli® Extra Virgin Olive Oil and lemon juice in 2-quart saucepan. Cook over medium heat, stirring occasionally, 5 minutes or until blueberries start to burst. Remove from heat; stir in lemon peel. Let cool to room temperature. Serve blueberry sauce with cake.
