Holiday Cooking with Casa Di Bertacchi Meatballs & SeaPak Popcorn Seafood

Holiday time is home entertaining time and if you’ve ever had any kind of party at your home for the holidays, you know its a lot of work. SeaPak Seafood Co. and Casa Di Bertacchi Meatballs brings you a few quick and easy recipes to make your holiday party a bit easier to handle. I’m actually in the middle of planning on myself and these will make great additions to my menu. With these delicious treats, you are sure to spend less time in the kitchen and more time with your guests. The first recipe comes from the former Executive Food Editor of Southern Living, Scott Jones. Scott made a delicious Jambalaya recipe using SeaPak Popcorn Shrimp. His recipe is the perfect way to bring the taste of the spiciness of New Orleans to a cold New York winter night.

Popcorn Shrimp Jambalaya

Prep Time: 10 minutes Cook Time: 35 minutes
Makes: 4 to 6 Servings

1 (14-oz.) package andouille sausage, cut into 1/4-inchthick slices
1 (10-oz.) package frozen vegetable seasoning blend
1 (32-oz.) container low -sodium, fat-free chicken broth
1 (14.5-oz.) can fire-roasted diced tomatoes with garlic
2 cups uncooked long-grain rice
1 teaspoon Cajun seasoning
1 (20-oz.) package SeaPak Popcorn Shrimp
2 tablespoons thinly sliced green onions

Cook sausage in a large Dutch oven over medium-high heat, stirring frequently, 8 to 10 minutes or until browned. Remove sausage with a slotted spoon; drain on paper towels. Add vegetable seasoning blend to hot drippings in Dutch oven, and sauté 3 to 5 minutes or until thoroughly heated. Add broth, next 3 ingredients and sausage. Bring to a boil; cover, reduce heat to low, and cook 18 to 20 minutes or until rice is tender and liquid is absorbed.

Meanwhile, preheat oven to 450°. Bake Popcorn Shrimp according to package directions. Spoon jambalaya into individual bowls or a large serving bowl; top with Popcorn Shrimp. Top with green onions, and serve immediately.

SeaPak’s Popcorn Fish is made from mild bites of flaky white fish cut from whole Pollock and is a great way to teach children to love seafood at a young age. When served alongside nutritious steamed broccoli, a balanced dinner can be ready in less than 15 minutes. Even better for hurried holiday nights!

Popcorn Fish with Honey Mustard Dipping Sauce

Prep Time: 4 minutes Cook Time: 15 minutes Makes: About 5 servings

1 (22 oz) package SeaPak’s Popcorn Fish, frozen
6 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
Pinch of salt

Cook popcorn fish according to package instructions. Stir mayonnaise, mustard, honey and salt together in a small bowl. Refrigerate sauce until popcorn fish are done. Serve Popcorn Fish with sauce and enjoy.

And lastly, here are two great recipes that use meatballs (they’re not just for spaghetti anymore). These recipes use fully-cooked Casa Di Bertacchi Meatballs, sold at Sam’s Clubs nationwide, which means they can be warmed up quickly for a fast, budget-friendly dinner. Casa meatballs are made from an authentic family recipe, quality ingredients and Italian seasonings—making you feel like you haven’t cut any corners, only your cooking time!
